Goat heads are the worst, but one thing in our favor is that the root will not grow back.  It is an annual weed, not a perennial weed.  This is good news because instead of digging up the whole root, all you need to do is pop the base of the root with a shovel and then pick up the whole weed with all its many arms.
Goat head plants are also known as puncture vines, and the thorny goat heads themselves are also called sticker burrs.  When we lived in Arizona we called them devil thorns.  The good news is that no matter what you call them, this tip applies.
Also, it is best to pick them up early when they are green and flowering, but if you pick up the goat head weeds when they are full of large healthy goat heads, just be careful and wear thick gloves – welding gloves if you have them.
